Berry Scones

Preheat oven to 440 F/225 C

 

Mix dry ingredients: 2.5 cups flour

2 tsp baking powder

1 tsp salt

 

Add 75 g room temp butter to the dry ingredients and use your fingers to mix until fine crumbs are formed.

 

Lastly, add 0.8 cup milk & 1 cup berries (fresh or frozen) - 1/2 cup blueberries & 1/2 cup strawberries. Mix briefly, just until everything is well incorporated, don´t over mix.

   

Turn dough out onto a lightly floured surface. Pat or roll dough out into a 1/2-inch (1.5 - 2 cm) thick circle. Cut into 8 wedges with a sharp knife or bench scraper and place onto a prepared baking sheet.

 

Bake scones in the preheated oven until golden brown on top, 12-15 minutes.

 

Top off your freshly baked scones with a glaze and with the zest of a lime or lemon.

 

For the glaze, simply mix:

0.8 cup icing sugar

2 tbsp lime juice/lemon juice

A dash of vanilla extract
