Chocolate Chip Cookie Cake

What's better that a chocolate chip cookie that has a crispy golden edge and soft mouth watering center with huge chocolate chunks? I'll tell you.. obviously a giant cake version of just that. This delicious chocolate chip cookie cake includes layers of cream cheese frosting, balancing out the sweetness. 

Treat yourself with this heaven-sent cake!!!

225 g butter (room temp)

1 cup brown sugar

3/4 cup castor sugar

1 tsp vanilla extract / vanilla sugar

2 eggs

1.7 cup flour

1 tsp bicarbonate

0.5 tsp salt

My very secret ingredient: 1 tsp coffee powder <3 (you'r welcome)

225 g chocolate (roughly chopped, both milk chocolate and dark chocolate)

Flake salt

 

Preheat oven to 440 F / 225 c

Whip together room temp butter, the sugars and vanilla extract + the coffee powder.

Mix in the eggs.

Mix in the flour, bicarbonate and salt. Mix just until incorporated. Lastly add the chocolate pieces (saving some for later to topp off the cookies with). 

Roll into 4 equal sized balls. *If the dough is too loose to roll place it into the freezer for 15-30 min.

Place two of the balls on one baking sheet and the other two on another baking sheet. Place the two balls diagonally to each other so they don't melt into each other in the oven. 

Bake for 20-35 min (switch placements half way through the time so the cookies on both baking trays get evenly baked) They are done when they are golden brown. 

 

Filling:

200 g cream cheese

1 cup heavy cream

Whip the heavy cream until stiff. In a seperate bowl whip up the cream cheese. 

Add a tbsp of the whipped cream at a time into the cream cheese and combine well before incorporating more (to prevent cream cheese lumps). 

Layer the cookies with cream inbetween each layer and there you have yourself a chocolate chip cookie cake! Enjoy!
