Chocolate Chip Cookies <3 (Delicious & Healthy)

These cookies are so good, perfectly soft & chewy. Best of all, they are healthy too!

1 cup nuts (almonds, walnuts or other) My personal favourite for these cookies are almonds. 

Roast the nuts in the oven at 360 F or 180 C for 5-12 min. They should look a bit shiny from the oils coming out of the nuts.

Mix the roasted nuts in a food processor until they are creamy, like a nut butter.

Let the butter cool a little before continuing to the next step.

Add 4 dates, a pinch of salt and a dash of vanilla extract and mix it with the nut butter in the food processor. *(If your dates are a bit stiff and dry you can soak them in warm water for 30 min to 1 day).

Lastly, add two eggs and mix again just until combined.

Put the batter into the fridge while you chop up chocolate of your choice (about 50-70 g). I prefer dark chocolate but you can use whatever chocolate you like. Add most of the chocolate chunks to your batter, save some for later.

Scoop the batter onto a paper lined baking tray making 6-9 balls. Top them off with the remaining chocolate chunks and put them in your preheated oven at 360 F or 180 C for 10-12 min or until golden. 

  

 

Let the cookies cool for a little and enjoy your soft, delicious and healthy chocolate chip cookies!

 

*Note: you can use pre-made nut butter, e.g. almond butter. You would need 1/2 a cup of pre-made nut butter.

*You could also leave the cookie batter in the fridge overnight if you want (this would make the cookie dough more thick, which would make it possible to roll them into balls instead of scooping on the batter).
