Comfort cinnamon buns perfect for welcoming fall and the colored leafs.
I'm going to be completely honest, cinnamon buns are not my favorite pastry out there but as soon as the sky is turning gray and raindrops start falling against the window, there is nothing that my soul calls for more than these freshly baked warm cloudlike, soft and fluffy cinnamon buns.
These cinnamon buns are coated with a dreamy, smooth, sweet yet fresh and light frosting... ahh my mouth is watering..

Dough
- 30 g of yeast
- 200 g milk (0.85 cups)
- 450 g wheat flour (3.2 cups)
- 55 g egg (1 egg)
- 0.5 tsp salt
- 1 tbsp ground cardamom
- 100 g butter, room temperature
- 45 g granulated sugar (0.2 cups)
- 40 g brown sugar (0.2 cups)
How to:
1. Crumble the yeast into the bowl of your dough mixer. Heat the milk until finger warm and pour over the yeast and mix around.
2. Add the remaining ingredients except the butter.
3. Knead the dough slowly with a hook. When the dough has come together, increase the speed a little and add the butter a little at a time.
4. Run the dough for 10 minutes in a machine until it forms gluten and feels elastic, shiny and nice on the surface.
5. Place the dough on a floured table and cover with a kitchen towel. Let the dough rest for 20-30 minutes. Grease the sides in an oven-safe form, approx. 32 x 22 cm. Cover the bottom with baking paper.
Note: You will probably need to cut off about an inch off the ends of the dough as the ends won’t be as full of cinnamon sugar as we would want it to be. I had 4 cinnamon rolls that couldn't fit so I put them into another smaller baking pan, otherwise you could use a bigger baking pan to fit them all in.
Filling
- 120 g brown sugar, sprinkled (0.6 cups)
- 3 tbsp cinnamon
- 150 g butter, room temperature
- 1 egg, for brushing
How to:
- Mix the ingredients for the filling, preferably in a kitchen machine with a flat wing.
Rolling:
1. Roll out the dough into a 20x12 inches or 50 x 30 cm rectangle.
2. Spread the filling over the dough as evenly as possible.
3. Roll the dough up tightly, starting from the long side.
4. Divide the dough into 15 pieces and place the pieces in the baking pan.
5. Cover with a kitchen towel and leave to rise until doubled in size, it takes 1.5-2 hours.
6. Set the oven to 180 degrees.
7. Brush the buns with egg. Bake the buns in the middle of the oven for 25 - 30 minutes, the buns should get a nice golden brown colour. Take the buns out of the oven and let cool a little.
Frosting
- 60 g butter, room temperature
- 130 g icing sugar (0.75 cups)
- 150 g cream cheese
- A dash of vanilla extract
How to:
- Beat together the butter, vanilla sugar and cream cheese with an electric whisk. Add the caster sugar a little at a time and beat to an airy and silky frosting.
Spread the frosting on each bun.
