Here is an easy and delicious sandwich cake recipe for you! This one is club sandwich inspired with chicken and bacon. You need to try it!
Note: This sandwich cake is preferably made the day ahead before it's served.
Start by making quick & simple pickled onions:
1 red onion
1/4 cup vinegar
1/2 cup sugar
3/4 cup water
1/2 tsp salt
Mix the ingredients. Let it rest in the fridge for 1 hour and while preparing the rest of the ingredients.
The filling of the sandwich cake:
250 g turkey bacon (chopped and fried)
500 g shredded roasted chicken
1/2 cup pickled red onions (the one you made earlier, just save some for decor)
1/cup grated parmesan
2 1/2 cup crème fraiche (or sour cream)
1 tsp dijon mustard
1/2 cup chopped cornichones
Around 15 sundried tomatoes
Salt & peppar
1 tbsp of lemon juice (adjust to your liking)
Chop the ingredients and mix. If the filling is too stiff add a little whipping cream until it's a bit softer.

18 bread slices - remove the edges.
Layer the bread with the filling.

Toppings:
200 g cream cheese (room temp)
1 1/2 cup whipped cream
Whip the whipped cream just until stiff. Mix a little bit of it with softened cream cheese until smooth and keep adding a little whipped cream at a time. Make sure to incorporate the cream cheese well to prevent lumps.
Decorate the cake with the frosting, add greens and herbs to the sides and top off with cherry tomatoes and the pickled red onions.
Let it sit in the fridge preferably overnight or at least for 6-7 hours before serving. Take out the cake from the fridge 30-60 min before serving. Enjoy!
