Easy Roasted Tomato Soup

 

Preheat the oven to 200 c/400 degrees F


10 tomatoes

2 dl/1 cup cherry tomatoes

3 onions (I used red, you can also use yellow)

8 cloves of garlic (peeled)

Seasoning: rosemary, basil, oregano, chili flakes, black pepper & salt


Cut tomatoes and onions in half and place on a baking dish or baking tray. Drizzle the vegetables generously with olive oil.


Place the vegetables in the oven for 35-45 min.


Blend the vegetables (in a blender or using a stand mixer) until a smooth consistency. 


Pour the soup into a pot, place over medium heat and add:


1-2 cups boiling water / 2-4 dl boiling water

1 dl cream 

1-2 tbsp tomato paste


Lastly, add any additional seasoning if needed & enjoy - Perhaps with a grilled cheese sandwich  :) .
