- 100 g butter
- 1.25 cups milk (or 3 dl)
- Splash of vanilla extract
- 2.4 cups flour (5.75 dl)
- 0.85 cups sugar (2 dl)
- 4 tsp baking powder
- ¼ cup lemon juice (0.6 dl)
- 2 tbsp lemon zest
- A pinch of salt
1. Preheat oven at 390 F or 200 C.
2. Melt the butter in a pan and add the milk and splash of vanliga extract. Mix the dry ingredients and lemon zest in a bowl.
3. Add the cooled liquids and whisk the batter until smooth.
4. Pour the batter into a buttered and crumb coated cake mold and place in the middle of the oven for 30-35 min.
- Test to see if the cake is done by inserting a wooden toothpick near the center, it should come out clean.
Glaze:
- 1/2 tbsp culinary lavender flowers
- 6 tbsp powdered sugar
- 2 tsp lemon juice
- 2 tsp water
2. Add the lemon juice and water and mix to a thick glaze.
3. Pour the glaze over your cake and decorate with lavender flowers and some lemon zest.
