Soft & Fluffy Cinnamon Rolls with Browned Butter Cream Cheese Frosting

There’s nothing better than the smell of freshly baked cinnamrolls filling your kitchen. These soft, squishy rolls are flavored with cardamom, filled with a rich cinnamon-sugar butter filling, and topped with the most irresistible browned butter cream cheese frosting.

Whether you enjoy them with your morning coffee, for Sunday brunch, or as a cozy dessert, these homemade cinnamon rolls are guaranteed to impress.

Ingredients

For the Dough:

  • 30 g fresh yeast or 1 tsp dry yeast

  • 200 g (¾ cup) lukewarm milk

  • 450 g (3 ¾ cups) flour

  • ½ tsp salt

  • 1 ½ tbsp cardamom

  • 1 egg

  • 100 g butter (room temperature)

  • 45 g (¼ cup) sugar

  • 45 g (¼ cup) brown sugar


For the Filling:

  • 120 g (⅔ cup) brown sugar or caster sugar

  • 3 tbsp cinnamon

  • 150 g butter (room temperature)

  • 1 egg

 

For the Frosting:

  • 75 g butter (room temperature)

  • 130 g (1 cup) powdered sugar

  • 200 g cream cheese

  • 1 tbsp vanilla extract

 

Instructions

 

Step 1: Make the Dough

  1. In a mixing bowl, add the yeast and mix it with lukewarm milk.

  2. Add the rest of the ingredients except for the butter.

  3. Mix in a stand mixer with a dough hook until the dough forms and doesn’t stick to the bowl.

  4. Gradually add the butter, waiting for it to incorporate before adding more.

  5. Knead the dough for 10 minutes (by hand may take up to 20 minutes).

  6. Cover and let rest for 20–30 minutes.

 

Step 2: Prepare the Filling

  1. Mix the brown sugar, cinnamon, butter, and egg.

  2. Roll out the dough into a rectangle (about 12x20 inches / 50x30 cm).

  3. Spread the filling evenly, then roll tightly from the long side.

  4. Slice into 15 pieces.

 

Step 3: Shape & Proof

  1. Place the rolls into a greased 9x13 inch (32x22 cm) baking pan.

  2. Cover and let rise for 1.5–2 hours, or until doubled in size.

 

Step 4: Bake

  1. Preheat oven to 356°F (180°C).

  2. Brush the rolls with beaten egg.

  3. Bake for 25–30 minutes, until golden brown.

 

Step 5: Make the Frosting

  1. In a saucepan, melt the butter over medium heat until browned and nutty.

  2. Let cool for 10 minutes until softened.

  3. Beat together the browned butter, powdered sugar, cream cheese, and vanilla extract until light and fluffy.

 

Step 6: Frost & Serve

Spread the browned butter cream cheese frosting over the warm cinnamon rolls and enjoy!

  • Don’t rush the proofing time — this is key for fluffy rolls.
