Strawberry Scone Cake


Scone dough:

2 1/2 cups flour
1/3 cup sugar
1/2 tsp salt
1 tbs salt
1 tbs baking powder

3/4 cup room temperatured butter
1/2 cup milk
1 egg
A dash of vanilla extract
1 1/2 cup frozen strawberries

                                                                  

Take out the strawberries and allow them to sit to defrost only a little.

Preheat oven to 360 F or 180 C.

Mix dry ingredients. Add the butter and mix it into a crumbly texture. Lastly, add the egg, milk, vanilla and the chopped up strawberries and knead to incorporate everything. 



Flatten the dough out on a baking sheet lined with parchment paper (about 1 inch/3 cm in height). Feel free to shape the dough as you like, I made my dough into a heart shape! <3



Bake for 15-25 minutes (depending on your oven), until lightly golden on the edges and on the top. Check if it's finished cooking by sticking it with a toothpick in the middle and see if it comes out clean. If the toothpick comes out clean, your scone is done baking! 

Allow to cool. 

Toppings:

1 cup whipping cream
1 cup strawberries
Jam of your choice (I used rasberry jam)
Some white chocolate and 1 tsp coconut oil
Pistachio and powdered sugar to garnish

Spread some jam on the scone (use any type of jam you like)



Whip up 1 cup of whipping cream and add that on top of the jam. Add strawberries to decorate. 



Melt some white chocolate over a water bath.

Water bath: in a metal bowl set directly into a skillet with about 1 inch/3 cm of water. Bring the water to a simmer and stir around the chocolate everynow and then until it's fully melted. Add 1 tbp coconut oil or neutral oil to keep the chocolate soft for longer.

Drizzle the melted chocolate on the scone cake and top off with roughly chopped pistachios and dust with icing sugar.
